Naturally fermented

The batter is left to ferment naturally. That is what makes a dosa light, with a gentle tang.

Pour + spread

The secret

Why ferment the batter?

Fermenting the batter is a South Indian tradition. As it rests, natural fermentation makes the batter light and airy, which is what gives a dosa its crisp texture and gentle tang. It is the slow part of a fast meal, and we do it from scratch.
